Slice the red peppers and onions into thin slices
In a large skillet, heat the olive oil. When hot, add red peppers and onions; cook for 5-7 minutes, until the veggies soften and brown slightly
Add the garlic and spices, sautéing for 2 minutes
Add the ground sausage, frying for 3 to 4 minutes on medium heat until the sausage browns on all sides
Add the orzo; sauté for 1-2 minutes
Pour in chicken stock and a handful of fresh basil, cover, and let it simmer on low heat for about 10-12 minutes, or until the orzo is cooked. Stir the orzo every few minutes to prevent sticking to the pan's bottom
Once the orzo is cooked and the stock is absorbed, add the mozzarella and mix it one last time
Finish with fresh basil and a generous amount of Parmesan cheese
