Chicken Tenders

- Italian breadcrumbs
- 2 chicken breasts
- 2 eggs mixed
- vegetable oil or Crisco shortening
Cut the chicken breasts into thin strips. Tenderize if needed to make it easy to cook through
Mix two eggs together
Dip the chicken strips into the eggs; shake off excess yolk. Coat the strips evenly with breadcrumbs
Heat a large skillet over medium-high heat. Use a generous amount of oil or Crisco vegetable shortening
Fry the breaded chicken strips in the skillet until golden brown. Place on paper towels when done to absorb excess oil
