Ingredients
- 1 zucchini squash sliced into rounds
- 1 tbsp olive oil
- salt and pepper to taste
Instructions
- Slice the zucchini into 1/2 inch rounds
- Heat a large skillet with the oil until it begins to shimmer, medium-high heat
- Fry the zucchini in the skillet for 2-3 minutes, and then flip with tongs or a spatula. Fry for another 2 minutes
- Remove zucchini from the pan and absorb excess oil on a paper towel
- Season with salt and pepper
