Ingredients
  

  • 2 tbsp olive oil
  • 4 cups chicken stock
  • 1 lb ground hot sausage
  • 1.5 cups orzo
  • 2 large red peppers sliced
  • 1 yellow onion sliced
  • 1 cup mozzarella shredded
  • 3 cloves of garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried oregano
  • fresh basil for topping
  • parmesan for topping

Instructions
 

  • Slice the red peppers and onions into thin slices
  • In a large skillet, heat the olive oil. When hot, add red peppers and onions; cook for 5-7 minutes, until the veggies soften and brown slightly
  • Add the garlic and spices, sautéing for 2 minutes
  • Add the ground sausage, frying for 3 to 4 minutes on medium heat until the sausage browns on all sides
  • Add the orzo; sauté for 1-2 minutes
  • Pour in chicken stock and a handful of fresh basil, cover, and let it simmer on low heat for about 10-12 minutes, or until the orzo is cooked. Stir the orzo every few minutes to prevent sticking to the pan's bottom
  • Once the orzo is cooked and the stock is absorbed, add the mozzarella and mix it one last time
  • Finish with fresh basil and a generous amount of Parmesan cheese
