Ingredients
- 2 tbsp olive oil
- 4 cups chicken stock
- 1 lb ground hot sausage
- 1.5 cups orzo
- 2 large red peppers sliced
- 1 yellow onion sliced
- 1 cup mozzarella shredded
- 3 cloves of garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dried oregano
- fresh basil for topping
- parmesan for topping
Instructions
- Slice the red peppers and onions into thin slices
- In a large skillet, heat the olive oil. When hot, add red peppers and onions; cook for 5-7 minutes, until the veggies soften and brown slightly
- Add the garlic and spices, sautéing for 2 minutes
- Add the ground sausage, frying for 3 to 4 minutes on medium heat until the sausage browns on all sides
- Add the orzo; sauté for 1-2 minutes
- Pour in chicken stock and a handful of fresh basil, cover, and let it simmer on low heat for about 10-12 minutes, or until the orzo is cooked. Stir the orzo every few minutes to prevent sticking to the pan's bottom
- Once the orzo is cooked and the stock is absorbed, add the mozzarella and mix it one last time
- Finish with fresh basil and a generous amount of Parmesan cheese
