Equipment

  • 2 mixing bowls
  • 1 electric mixer
  • 2 baking sheets lined with parchment paper
  • 1 tablespoon for scooping

Ingredients
  

  • 14 ounces sweetened shredded coconut
  • 10 ounces sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 2 egg whites
  • 1/4 teaspoon kosher salt
  • 2/3 teaspoong Crisco shortening
  • 2/3 cup chocolate chips

Instructions
 

  • Preheat the oven to 325 degrees
  • Combine the coconut, condensed milk, and vanilla in a large bowl
  • Whip the egg whites and salt on high speed in the bowl of an electric mixer
  • Carefully fold the egg whites into the coconut mixture
  • Drop the batter onto sheet pans lined with parchment paper using a tablespoon or other dough scooper
  • Bake for 30 minutes, until golden brown
  • To add chocolate drizzle; combine 2/3 cup of chocolate chips and 2/3 teaspoon of Crisco shortening in a bowl
  • Microwave the chocolate chips and shortening and mix them together
  • Pour the chocolate over cooled macaroons
