  • 1 large skillet
  • 2 bowls

Ingredients
  

  • Italian breadcrumbs
  • 2 chicken breasts
  • 2 eggs mixed
  • vegetable oil or Crisco shortening

Instructions
 

  • Cut the chicken breasts into thin strips. Tenderize if needed to make it easy to cook through
  • Mix two eggs together
  • Dip the chicken strips into the eggs; shake off excess yolk. Coat the strips evenly with breadcrumbs
  • Heat a large skillet over medium-high heat. Use a generous amount of oil or Crisco vegetable shortening
  • Fry the breaded chicken strips in the skillet until golden brown. Place on paper towels when done to absorb excess oil
