Ingredients
- 1 cup white rice
- 2 large chicken breasts
- 1 tbs olive oil
- 1 can cream of mushroom soup
- 1/2 cup fresh mushrooms sliced
- pepper to taste
Instructions
- Cook 1 cup of rice; keep warm
- In a large pot, use 1 tbsp olive oil and heat on medium-high. Sear the chicken breasts on each side for 1 minute
- Add the mushroom soup and fresh mushrooms to the pot, cover, and simmer for 30 minutes
- Serve the chicken with the rice; ladle generous helpings of mushroom sauce over both chicken and rice. Season with black pepper
